Best Homemade Chicken Enchiladas

Homemade enchiladas made by my grandma at her house in her big new lovely kitchen.

My grandma loves to make her homemade chicken enchiladas for my family that her own mother taught her how to make and trust me there so good to eat she makes the best I have ever had.

The ingredients for chicken enchiladas are 3 table spoons of vegetable oil, 1 1/2 pound of boneless chicken breast, salt and pepper, 1 teaspoon mexican spice blend, 1 (28-ounce) can stewed tomatoes, 16 corn tortillas, 1 cup shredded cheddar jack cheese, then pull chicken breast apart by hand into shredded strips, warm toritillas on high for 30 seconds it will soften them and make them pliable, using a large bowl to dip tortillas in enchilada sauce to lightly coat over the chicken and cheese and olives and bake for 15 minutes in preheated 350 degrees oven until cheese melts. After being done cooked you’ll smell the best enchiladas and taste the best enchaladas that are great and tasty.

Red enchilada sauce ingredients 2 tbsp vegetable oil, 4 tbsp chili powder 1/2 tsp garlic powder, 1/2 tsp salt, 2 cups chicken or vegetable stock, and you dip the tortillas in the sauce and place over your shredded chicken, even when you dip the tortillas in sauce and it will still taste good with just the red sauce and tortillas.

When my grandma is done making the food she takes her nice plates out and places the food on them and makes sure it looks nice and neat.
